For the most part, Hell is a harsh caste system - with demons being born into a class held by their parent(s) and remaining their until death. It is a rare thing indeed for a demon to rise above their class. Most commonly, you will see demons brought low by bad luck or some nefarious plot.
Obviously, these rules don't apply to Player characters. Your character will have more opportunities to rise above their station and change their destinies - within reason. A Riffraff is highly unlikely to achieve even Low Court status without some serious storytelling. Fortunately, we're all about that here!
Below are the various classes you can choose for your character. Some classes have other options listed to choose from (like the Mercenary in the Thief class). Feel free to mix and match, but try to keep things realistic. A Low Court noble can be a Merchant, Spy, or even and Elite, but they will rarely also be Slaves or Riffraff. Likewise, a Slave can be a Thief or Spy, but will rarely have the freedom to be an effective Elite.

Riffraff
The lowest of the low - those who have nothing. With no home, no skills, and no way to provide for themselves, many take up residence as squatters in Pandemonium's run-down quarters and slums. These ghettos are often raided by slavers looking to add to their stock. Many a slave has roots in this class, as do Thieves.
Most Riffraff are Demonlings, though any demon is subject to the depths of poverty.

Slave
Slaves often start their lives as Riffraff, through there are quite a few who began life as something else. Some demons find themselves being sold into slavery to pay off their debts (both real and imagined), while others were simply the children of slave parents. Slaves often fill the role of skilled and unskilled laborers, and some are even taught how to run large households and manage accounts.
Pets are part of the slave class, but apart from it as well. Pets are most often owned by wealthy Merchants and nobles, and are often trained to please their masters in a multitude of ways. Most Pets are lovely to behold, with manners and skills equal to their physical appearance. Training to be a Pet begins in early childhood, and it is uncommon for a Pet to have been culled from once-free demons.
While any demon may be a slave, most Pets are Devil Cats and Devil Cat Pe'ri due to their submissive and sensual natures.

Thief
Thieves often have their beginnings as Riffraff who developed enough skill to survive on the streets of Pandemonium. This can be as common as pickpocketing to as complex as breaking into a noble's house to steal valuables, and everything in between. The Thief class is also made up of Mercenaries, and it is rumored that the lot of them are controlled by a Thieves' Guild, which is run by an unknown demon of immense power.
Any demon can become a Thief, or the subset of Mercenary.

Merchant
Name it, and there's a Merchant selling it. Most Merchants set up shop in the Marketplace district of Pandemonium, though one can find a shop in almost every district and quarter in the city. This class encompasses many different jobs, from the city's Library Administrator to the scrabbling curse-caster in the back alley. Merchants often hire Thieves to steal for them, and the wise Merchant pays extra to protect themselves from being robbed.
Any demon can be a Merchant, and it isn't unheard of for Thieves to set up shop to sell their stolen goods.

Hell's Legion
A fairly common occupation in Hell is that of a soldier. Many a demon feeling as though there's nowhere to go often turn to the Legion - free room and board and they train you for free. In recent centuries, with the reign of the Queen, the life of the common soldier is fairly dull. Many ply their trade as masons or blacksmiths on the side, and some even leave the Legion to try their hands (or paws) as artisans or Merchants.
The City Guard is also connected with the Legion, and it is their job to keep chaos from reigning in Pandemonium. It is no easy task and quite an unpopular occupation among the denizens. Yet the pay is good and the bribes are better.
Any demon can become a member of the Legion or City Guard.

Elite
If the Legion of Hell can boast anything, is that they house some of the best warriors in all the Realms. As their name suggests, Elite are the best of the best - the Navy SEALs, Russian Spetznaz, or Isaraeli Mossad of Hell. They hold a higher rank than the common soldier and many have command within the Legion itself. Most Elite serve as bodyguards for the Queen and her court, and while a Low Court noble might find an Elite bodyguard to be quite the honor, most Elite see it as an insult.
The Palace Guard is part of the Elite, and it is their job to ensure the safety and security of the Palace. However, in recent years it has come under ridicule from other Elite and even other demons due to assassinations, infiltrations, and even open corruption.
Though any demon can become an Elite, most Elite are Fallen. It is uncommon to see Demonlings among the Elite, and almost unheard of to catch a Devil Cat at it.

Spy
Spies are usually a secondary class to something - like a noble or Thief - and can be from any walk of life. Spies trade in information, and have even been known to play both sides in a conflict to create even more chaos, and keep themselves in business. By necessity, most Spies do not flout their occupations for all to see, and a good Spy will have a middleman to intercede with clients on their behalf. A Spy can stand to make quite a bit of money if their information proves useful, or lose everything if it does not.
Assassins are part of the Spy class, and like the Spy, will rarely meet with clients personally. It is unknown if Spies and Assassins are part of the legendary Thieves' Guild or not, and those who do know, aren't talking.
Any demon can be a Spy or Assassin.

Low Court
All nobles are considered members of the Low Court. Most nobles have their own lands either outside of the city, or in their racial lands beyond, as well as a home within the city. Some are even favored enough to have appointments in the Palace itself. Most Low Court nobles dance attendance on the High Court, vying for favor, and while away their time with trivial amusements and petty indulgences. Most members of the Low Court are born into this class, and tend to look down on those who are not.
While any demon can become a member of the Low Court, no Demonling or Devil Cat can be born into this class.

High Court
The High Court is made up of the heads of the various races and their attaches. Each ruler (be it king, queen, warchief, or ambassador) sits on the Imperial Council, where they can attempt to solve the various problems of Hell.
Devils and Nightmares are a monarchy, with a hereditary leader. Fallen are led by the highest-ranked Elite (often the General of Hell's Legion). Gabriel Rachets are led by a Warlord, who won the title by might of arms. Kitsune elect a new Lord of Nine Tails each century. Leccubi are represented by an Ambassador, who is backed by a council of her own. Currently, there are no rulers for Constructs, Demonlings, or Devil Cats, given their submissive and subjugated natures. Pe'ri are too individual and varied to have a single ruler, and most adhere to one part of their parentage or the other.
